So this past weekend I signed a lease for an apartment, which I’m very excited about, I feel like I’m finally grown up. My sister recently bought a house so we’ll both be emptying the nest within the next few months. I’ve already gone a little crazy decorating, and I haven’t even moved in yet. I feel like those people who as soon as the get engaged hop on pinterest and pin every single wedding thing they see. I’ve gone a little crazy. But I plan to do a lot of DIY stuff so be prepared for that =)

Crock Pot Chicken Tacos

I hope everyone’s been keeping to their new years resolutions. I’ve been trying to change up my workout routine to make keeping my resolutions a littler easier so I’m going to start going to kickboxing class 2-3 times a week instead of once, which I’m really excited about. I’m also going to be getting a hand-me-down kickboxing bag (that’s in great shape) from an old teacher- so I’m very excited about that as well.

And of course there’s the food. I like to make my meals and do leftovers because cooking during the week is just too hard. So I sort of created a list of meals to make in the coming weeks, that’s kind of weird- I know, but it works for me. So this week I made Chicken Tacos and I also made Salmon Burgers and froze them for the days I have nothing made for dinner, I can just pull a burger out and thaw it during the day. So the first time I do that I’ll post a picture and the recipe. I tried something new and kind of made it up so hopefully we both won’t be disappointed.

But back to the Chicken Tacos… One thing I hardly ever use is the crock pot- I found out this weekend that I should be using it a whole lot more. If you can’t cook, the crock pot could be your best friend. Literally just throw a bunch of stuff in there and let it go. This weekend I made chicken tacos. The crock pot is really good for making shredded chicken because it just falls apart when you’re done cooking it.

What you need:

The crock pot of course
6 whole boneless chicken breasts (or however much you need to feed whoever)
1 jar of salsa
1/2 packet of taco seasoning
Tortillas
Lettuce
Avocado
Sour Cream/Hummas
Any other taco toppings you want (I went for the healthier ones)

Now pay attention because this is really difficult..

1. Put the chicken, taco seasoning and jar of salsa in the crock pot and cook on high for 4-6 hours or low for 6-8 hours.

That’s it, I know, so hard. I was home throughout the day so I occasionally stirred things around a bit.

2. After you removed the chicken from the crock pot you can use a fork or two to shred the chicken.

3. Break out the tortillas and start building yourself a taco.

The chicken alone is just so good, I will probably use that crock pot chicken recipe in the future for other things besides tacos.

Starting the new year off right

It’s 2013. Where in the world did 2012 go? So many great things have happened this year in my life. I graduated from college- that was a long time coming. I accepted a full-time ‘big-girl’ job. I took an awesome road trip with friends. I started to get into shape and eat and be healthier. I survived the shock of being bossless. And now the year is over, unto new and greater things. Usually I don’t feel the difference from one year to another- from December 31st to January 1st, but this year it really does feel like a new beginning and I’m excited.

So what’s a new year without a New Year’s Resolution. I always make the same one every year- ya know the same one that just about everyone makes, the same one that just about everyone doesn’t stick to and the same one that I never stick to. Time to make a change. This year I feel confident that I will stick to it. My resolution this year is to hit my goal weight, which I’m going to keep a secret for now. Since I started shaping myself up in June, I’ve put a good dent in that goal but I still have some ways to go. I’ll admit that I’ve slacked the past few weeks, its hard with the holidays and all but its a new year. I’m cracking down on the gym again and doing some better meal planning. I’ll thank my gym, even though they give out free pizza every first monday of the month- which is just mean and I struggle to resist everytime, but they were open today so I was able to hit the ground running- no pun intended =)

I’d like to hit my goal by July 8th, which is one year from the day I started getting healthier but really, I’m hoping to be there sooner. Either way I have potentially 2 weddings this year that I want to be ready for. Wish me luck!

So to start off the new year meal planning I made some delicious chicken tonight and portioned out dinners for the next 4 nights- makes things so easy. My dinner tonight: Bruschetta Chicken

Ingredients:

a basket of cherry tomatoes
2 Tbsp balsamic vinegar
2 Tbsp olive oil
basil
chicken
balsamic glaze

1. Add sliced tomatoes, chopped basil, balsamic vinegar and olive oil to a bowl and marinate for at least 2 hours.

2. Place whole chicken breasts into a baking dish and spoon the marinated mixture overtop, then drizzle with the balsamic glaze.

3. Bake at 350 for about 45-50 minutes or until chicken is cooked all the way through.

I made brown rice and a mixed steamer veggie as sides and I now have dinner for the next few nights. And it didn’t even take much effort- its a very simple recipe.

I also decided to plan my workouts a little better because I feel like a hit a bit of a plateau the past few months. Another thing I resolve to do is do something about all the pins I pin. Aka actually cook some of the recipes and actually do some of the exercises. So I’m going to sort through everything I’ve pinned onto my Discipline board and make some workout plans for myself. I’ll let you know how that goes.

I’ll throw another resolution out there too- post a little more often..? I hate to make promises I can’t keep but I’ll try.
